Green Chile Tortilla Soup
Ingredients
- 1/2 cup Young Guns Green Chile and Tomatillo Salsa, add more to taste
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp olive oil
- 1 15.5 oz can black beans, drained
- ½ 1 14.5 oz can fire roasted diced tomatoes
- 1 15.5 oz can corn kernels, drained
- Pinch sea salt
- Pinch black pepper
- 2 cups cooked chicken, shredded
- 1 tsp chili powder
- 1 tsp cumin
- 3 cups chicken broth
- 1 lime, juiced
- ¼ cup cilantro, chopped
- Tortilla strips, diced avocado and chopped cilantro for serving
Instructions

Heat oil in a large skillet. Add onions and garlic. Cook for about 3-4 minutes.

Pour in broth. Add the black beans, corn, diced tomatoes, lime juice, cilantro, pinch of salt and pepper, cumin, chili powder and green chile salsa. Cook for 2-3 minutes.

Stir in the chicken and simmer for 10 minutes. Spoon soup into bowls and top with tortillas strips, avocado and cilantro. Enjoy
