Ingredients
- 1 lb ground turkey
- 1 tsp olive oil
- I1 small onion, chopped
- I 15 oz can fire-roasted diced tomatoes
- 1 15 oz can black beans, drained
- ½ cup Young Guns Hatch Valley Green Chile
- Pinch sea salt
- Pinch black pepper
- 2 cups shredded Mexican cheese, divided
- 6 large tortillas
Instructions
- Heat olive oil in a large pan. Add turkey, breaking it up as it cooks. Cook for about 4 minutes, then add onions and cook for another 4 minutes. Season with salt and pepper.
- Add diced tomatoes, black beans and Young Guns Green Chile. Simmer for about 4 minutes. Stir in half of the cheese.
- Lay out the tortillas and fill them evenly with the turkey mixture. Roll them up and place them seam side down in a large baking dish.
- Top the burritos with a little extra green chile and the rest of the cheese.
- Bake at 350 degrees uncovered for 20 minutes. Enjoy ☺
